Watermelons are some of the many joys of summertime produce. Sweet, juicy, refreshing, and so delicious, they are perfect. I love fresh, cold watermelon any time of day – and especially since I’ve been pregnant, it’s been a huge craving: all day, every day. Literally. These watermelon coolers are so easy to make and totally versatile – doctor them up for your next brunch or serve them as is. So refreshing!
THE WATERMELON COOLER
5 cups diced watermelon
¼ cup fresh lemon juice
1 cup blueberries, rinsed and dried
1 ½ L seltzer water
2 cups ice
¼ cup simple syrup, optional
1. In a blender or food processor, puree the watermelon until there are no pieces remaining.
2. Place a fine mesh strainer over a bowl and pour the pureed watermelon into the strainer and let sit until the juice has separated from the pulp. You can speed this process by pressing the puree with the back of a large spoon.
3. In a large pitcher, combine fresh lemon juice, blueberries and seltzer water. If you prefer a sweeter drink, add the simple syrup and stir well to combine.
