What’s it all about?

Meals that are quick to prepare, you won’t break your bank account with and leave you with enough energy at the end of the day to read an extra few pages of ‘Charlie and The Chocolate Factory’ to your kiddo or have a conversation with your one-and-only about nothing more serious than if the bathroom should get a fresh coat of paint.  That’s my family life.

Whatever your situation is; kiddos, partner or good friends over for a natter….

You deserve a sit down meal and so do they.

Can’t wait to share this and a whole month of comforting dishes with you AND my blog is getting a very funky redo that should be ready by the end of March.  Lots of good things to look forward to.

Here’s your shopping list:

3 cups cherry tomatoes (halved), 6 cups fresh spinach, 3 T olive oil, 2 crushed garlic cloves, 6 cups spinach, 1/2 cup red onion (chopped), pinch crushed chili, 1 bay leaf, 1 tsp dried basil, 8 oz spaghetti, 4 1/2 cups chicken stock (want a vegetarian dish? use veg stock instead), smoked salmon for garnish (totally optional).

Now what to do:

Combine all ingredients in a large pot.
