When I saw this no bake cookie recipe on Rachel Shultz’s food blog, my eyes lit up because at last, here’s a cookie recipe that I can eat. I’m allergic to dairy and legumes, and I haven’t had sugar in the new year (never going back), so there’s a lot that I can’t eat. I love apples and eat at least one, if not two everyday, so as you can see, if I exclude the coconut and chocolate, this recipe is perfect. It’s beautiful enough to serve to guests, and kids, and it takes less than 5 minutes to prepare. You see where I’m going with this. Enjoy!
