I’m so thrilled to be here today sharing my newest obsession: lentils with brown rice and lemon kale. This recipe is nutritious, rich in whole grains and packed with the good-for-you green, kale!

½ cup uncooked brown or green lentils (not red lentils, they won’t hold their shape)

½ cup uncooked brown rice

4 cups kale, washed and dried, stems removed and discarded

1 garlic clove, finely minced (you could also push through a garlic press)

1 small red onion, thinly sliced

2 tbsp olive oil

1 lemon, juiced

salt to taste

¼ tsp red pepper flakes, or more to your taste

1. Bring a medium pot of 3 cups water to a boil, add brown rice, stir, cook about 30-40 minutes or until tender, drain any remaining water

2. While the rice is cooking, bring another medium pot of 3 cups water to a boil, add lentils, reduce heat to medium low and cook lentils until just soft but not mushy, about 25-30 minutes, drain any remaining water
