EASTER DESSERT RECIPES
With Easter right around the corner, now’s the time to start planning the menu. When I think of Easter dessert, maybe it’s “the kid in me,” but chocolate eggs and peeps come to mind. The six sweet treats I’ve put together here are a tad more sophisticated, but all with a twist, and easy to make. The recipe twists include two “skinny” (low-fat) versions, two fruit desserts you may not associate with Easter but are perfect for the celebration, and a carrot cake touted as be the absolute best.
SKINNY EASTER EGG CAKE BALLS
In lieu of decorating Easter eggs, consider this more creative Easter dessert idea: cake balls decorated as Easter eggs. This recipe is significantly lighter than traditional cake balls, thanks to the use of egg whites and fat free Greek yogurt — in other words: neither oil nor butter is required. These skinny balls also call for a cake ball pan, eliminating the need to mix the cake with frosting, which is time consuming and adds far more fat and calories. Put these Easter Egg Cake Balls in a basket, and watch them disappear.
