GET A BIT MORE SLEEP ON CHRISTMAS MORNING

Hi! It’s Jane from ‘Jane’s Adventures in Dinner’ and I’m so happy to be back at Sarah’s house. Are you ready to wow Christmas morning? It’s not easy to wow first thing in the morning. I mean, who can race up, get a photo worthy breakfast ready, put some slap on, and sustain that smiley face throughout the entire day? No one. That’s why folks are stressed and exhausted by 2:00 pm — not to mention a bit more than cranky. How about pretty Cranberry Orange Muffins that can be made the day before or even week before, frozen, and thrown in the oven to toast up for a few minutes?

FORGO THE MAKEUP

Get a bit more sleep (if you can), forgo the makeup (you’re meant to look a little ramshackle in those pictures), and keep your happy on.

AND BAKE

CRANBERRY ORANGE STRUESEL MUFFINS

YIELD

12 large muffins topped with crunchy streusel

MUFFIN INGREDIENTS

1 cup sugar
3/4 cup butter
juice of 2 oranges
2 eggs
zest of 1 orange
1/2 tsp cinnamon
2 1/2 cup flour
2 tsp baking powder
1 1/2 cup frozen cranberries (Freeze ahead of time so the colour doesn’t run everywhere)

STREUSEL TOPPING INGREDIENTS

1 cup oatmeal
1/2 cup flour
1 cup brown sugar
1/2 cup butter
1/2 tsp cinnamon
zest of 1 orange

DIRECTIONS
  1. Cream together the butter and sugar until fluffy.
  2. Add eggs before beating again. This is your chance to get light muffins (not bricks).
  3. Add orange juice and zest.
  4. Fold in cranberries and cinnamon.
  5. Fold in the flour and baking powder.
  6. Divide the batter between 12 large muffin cups. (Note: My trick is to freeze the cranberries ahead of time, so that they cook more slowly and don’t bleed colour everywhere.)
  7. Rub struesel ingredients together to make lumpy sand. Sprinkle on top of the 12 muffins.
  8. Bake at 350 for 25 minutes or until the centers are cooked through.
